I Understand all that.  I was just impressed with how close the full colour RAW image was to what I was after.

Actually has sepia tones which in fact may be the colors of the wood, straw and ground.

As Simon explained, if you shoot in JPEG with monochrome mode, you will get B&W.

If you captured in raw file format, even in camera 'monochrome mode' the downloaded file will revert back to the coloured raw file (raw files contain ALL the original information).

Converting to a B&W version is then done post capture during editing.
